1/4 cup mayonnaise
2 T purchased chili sauce
1 T Dijon mustard
1 T SOOC Persian Lime Olive Oil
1 T SOOC Sicilian Lemon White Balsamic
4 C mixed baby greens or chopped romaine
1 avocado, peeled, halved, pitted
12 cooked, peeled medium shrimp
1 green onion, finely chopped
Sea salt & black pepper to taste


Whisk mayonnaise, chili sauce, mustard, Persian Lime Olive Oil, Sicilian Lemon White Balsamic in small bowl to blend. Season dressing with salt and pepper. Arrange greens on 2 plates. Top greens with 1 avocado half, rounded side down. Fill avocado cavities with shrimp. Spoon dressing over; sprinkle with green onion.

**SUBSTITUTIONS: This recipe is quite versatile, instead of the Sicilian Lemon, try Coconut, Mango, Grapefruit or Pineapple Balsamic. And mix it up a bit with the Chipotle Olive Oil!
