A healthy and beautiful meal, this stir fry goes well with either rice or noodles (though we love it with the garlic infused rice in the recipe!). Thanks to our Serrano Honey Vinegar, this simple stir-fry has a nice balance of sweet and spice.
Ingredients
Stir Fry
2 medium sized chicken breasts, cut into 1 inch cubes
1 red bell pepper, cut into 1 inch cubes
1 medium sized red onion, cut into 1 inch cubes
1/2 lb White or Crimini mushrooms, quartered
1 broccoli crown, cut into florets
2 cloves fresh garlic, chopped
2 T SOOC Gourmet Garlic Olive Oil
1/2 C SOOC Serrano Honey Vinegar
Crunchy Chow Mein noodles (optional)
Rice
1 C uncooked white or brown rice
1 T SOOC Gourmet Garlic Olive Oil
1 3/4 C liquid, water or chicken stock
Directions
Heat Garlic Olive Oil in a medium pot over medium heat. Pour rice into pot and sauté rice until translucent (about 5 minutes). Add the liquid and cook rice according to package directions. Set aside until the rest of the dish is prepared.
Sauté chicken in Garlic Olive Oil in a medium high side pan until done and set aside in a bowl. Add the broccoli, onions and red bell peppers to the pan and sauté until cooked through, yet still crunchy. Place cooked chicken back into the pan and add the Serrano Honey Vinegar. Cook, while stirring, until all the ingredients are coated, the chicken is heated and sauce is reduced. Serve alone, over rice or with noodles.
SUBSTITUTIONS: In place of (or along with) our Gourmet Garlic Olive Oil, try the Toasted Sesame Oil or Blood Orange Olive Oil. If the Serrano Honey Vinegar is a bit too spicy for you, try our Honey Ginger White Balsamic.
