Mmmm…. Beef short ribs, good ANY time of year!

Ingredients

3 lb beef short ribs
2 Tbsp Garlic Olive Oil
1 lg sweet onion, diced
4 cloves garlic, minced
1/3 cup Neapolitan Herb Dark Balsamic
2 Tbsp tomato paste
2 Cup IPA style beer
2 Cup beef stock (divided)

Directions

Heat the Garlic Olive Oil in frying pan and sear the ribs on all sides. Don’t crowd the pan, work in batches.
Lift ribs from pan and place in a small roasting pan or stack in a slow cooker.
Sauté onions & garlic in frying pan until soft and browning.
Deglaze the pan with Neapolitan Herb Dark Balsamic, 1 cup of beef stock and tomato paste, scraping up any bits with a wooden spoon. Pour over ribs with the beer and remaining stock.
Oven Method:
Preheat to 325 F. Cover roasting pan tightly with foil, and roast ribs for 3 hours.
Slow Cooker Method:
Cover and cook ribs on low for 6 to 8 hours.
