Ingredients
6 Cups cubed watermelon
1 Cup crumbled Feta cheese
¼ red onion, thinly sliced
¼ cup chopped fresh mint
1 tsp freshly squeezed lemon juice
3 Tbsp Thai Lemongrass Mint White Balsamic Vinegar
3 Tbsp Essential Basil Olive Oil
Directions
Combine the first 4 ingredients in a large bowl.
Combine the lemon juice, Lemongrass Mint Balsamic and Basil Olive Oil in a container with a tight-fitting lid; shake well.
Pour over the watermelon mixture and toss gently to coat. Serve immediately.
