6 C cubed watermelon
1 C crumbled Feta cheese
¼ red onion, thinly sliced
¼ C chopped fresh mint
1 tsp freshly squeezed lemon juice
3 T SOOC Thai Lemongrass Mint White Balsamic Vinegar
3 T SOOC Basil Olive Oil
Combine the first 4 ingredients in a large bowl.
Combine the lemon juice, Thai Lemongrass Mint White Balsamic Vinegar and the Basil Olive Oil in a container with a tight-fitting lid; shake well. Pour over the watermelon mixture and toss gently to coat. Serve immediately.
