Diana’s Beet Salad

This salad is very simple, but versatile! Use this year round for potlucks, barbecues and more! It is always a hit!


1 bunch beets, cooked, peeled and thinly sliced
2 green onions, chopped
1 apple, peeled and cored, thinly sliced
3 tbsp raisins

For the Dressing

3 tbsp SOOC Eureka Lemon Olive Oil
2 tbsp SOOC Cranberry Pear White Balsamic Vinegar
Salt and pepper to taste
½ tsp Dijon mustard
2 tbsp maple syrup (optional)


Mix the dressing ingredients and pour over vegetables and fruit.
