A shrub is a drink, not a plant, didn’t you know?
A super refreshing drink that pack’s a punch and is the perfect summer thirst quencher.
Apparently, you can add alcohol, but don’t quote us on that! 😁(recipe will make about 20 servings)
Ingredients
Balsamic Syrup:
375ml bottle of your favourite White Balsamic Vinegar
1 cup of fresh strawberries roughly chopped or broken to release juices (or any fresh seasonal fruit)
3-4 thin slices of lemon
1/2 cup English Cucumber, thin slices
Serving:
Club soda/plain sparkling water (to serve)
Optional:
Fresh strawberries sliced
Lemon slices
Fresh mint leaves
Directions
Balsamic Syrup:
In a large glass (non-reactive) bowl add the broken fresh fruit, cucumber and lemon slices, pour White Balsamic and refrigerate for two to four hours. The longer it sits, the more pronounced the flavour of the infused fruit will be.
Strain, keep in a tightly sealed container (or put it back in the bottle) and refrigerate for up to two months.
Serving:
To serve, add 1-2 tablespoons of syrup for every 6-8oz of chilled sparkling water.
Add fresh fruit, lemon, cucumber, and/or mint.
Serve chilled over ice.
Chef Tip:
Before you make a ‘batch’ try adding a tablespoon of any other flavour mixed with 6 – 8 ounces of sparkling water. If you like it, then you can use it in this recipe.
