2 C flour
2 ½ t baking powder
½ t salt
1 C low-fat, plain yogurt
⅔ C sugar
½ C SOOC Persian Lime Olive Oil
2 eggs
2 limes~ zest of one, juice of two
Green sprinkles *optional


Preheat oven to 350. Line a muffin tin with 12 liners.

In a small bowl, sift together flour, baking powder and salt.

In a large bowl mix yogurt, olive oil, sugar, zest, and lime juice. Add the eggs, one at a time, mixing thoroughly. Slowly stir the flour mixture in and mix until it is a creamy batter. Fill cupcake liners about ⅔ full.

Bake 20 min, or until toothpick comes out clean. Cool on wire rack before icing. Try topping with our Key Lime Whipped Cream.

**SUBSTITUTIONS: Not into Lime? This recipe can be easily adapted to any citrus Olive Oil; Blood Orange, Eureka Lemon or Mandarin (for a bit more ZEST)
