Easier to prepare than french fries – they require no peeling! These are everything potatoes should be, crisp-skinned, soft & creamy inside and full of flavour, sprinkled with a generous amount of Parmesan.

Recipe for two, simply multiply for more people. Remember, you can vary almost ANY of our recipes to your taste. If the Baklouti is too hot for you try Chipotle or just go with Garlic all the way!

Ingredients

4 small to medium new potatoes (Not baby, and not thick skinned)
1 T SOOC Baklouti Green Chili Olive Oil
1 t (divided) Vancouver Island Garlic Infused Sea Salt
2 T SOOC Gourmet Garlic Olive Oil
2 t grated Parmesan cheese

Directions

Pre-heat oven to 425*F.

Score the skin on one side of the potatoes and microwave for 2 minutes.

Place in an oven-safe dish or pan with scored side down. Drizzle with SOOC Baklouti Green Chili Olive Oil, plus a pinch of Sea Salt and roll around to coat potatoes.

Bake for 15 minutes.

Remove from oven, flip potatoes so scored side is up and with the bottom of a large bottle or glass ‘SMASH’ the potatoes to about 1 inch thick. Pour the SOOC Gourmet Garlic Olive Oil INTO the potatoes. Season with extra salt & pepper (or other favourite seasoning) and return to oven for 10 minutes.

Remove and add 1/2 teaspoon of Parmesan to each potato and return to oven for 5 minutes. Remove and serve.
