This easy roasted broccolini recipe is the perfect side dish alongside grilled or roasted meat or fish or can be served atop cooked pasta or rice. It’s ready in less than 45 minutes, making it ideal for weeknight cooking.

Ingredients

1 large bag of broccolini, trim the ends
4 Tbsp Spicy Calabrian Pesto Olive Oil, divided
Kosher salt
freshly ground pepper
2 tsp Sicilian Lemon White Balsamic Vinegar
1 tsp minced shallot
2 Tbsp freshly grated Parmigiano-Reggiano cheese

Directions

Preheat the oven to 400°F.

On a large baking sheet lined with parchment paper, toss the broccolini with 2 Tbsp of Pesto Olive Oil and season with salt and pepper.

Roast the broccolini in the oven for about 20-25 minutes, tossing halfway through, until browned and tender.

In a small bowl whisk the Sicilian Lemon Balsamic with the shallot and the remaining 2 Tbsp of Pesto Olive Oil; season the dressing with salt and pepper. Scrape the broccolini into a bowl.

Add the dressing and grated cheese, toss well and serve.
