Mmmm…. Beef short ribs, good ANY time of year!


3 lb beef short ribs
2 Tbsp SOOC Gourmet Garlic Olive Oil
1 lg sweet onion, diced
4 cloves garlic, minced
1/3 c SOOC Neapolitan Herb Dark Balsamic
2 Tbsp tomato paste
2 c IPA style beer
2 c beef stock (divided)


Heat the oil in frying pan and sear the ribs on all sides. You will do several batches. Lift ribs from pan and place in a small roasting pan or stack in a slow cooker. Sauté onions & garlic in frying pan until soft and browning. Deglaze the pan with the balsamic, 1 cup of beef stock and tomato paste, scraping up any bits with a wooden spoon. Pour over ribs with the beer and remaining stock.

Oven Method – Preheat to 325 F. Cover roasting pan tightly with foil, and roast ribs for 3 hours.

Slow Cooker Method – Cover and cook ribs on low for 6 to 8 hours.
