So I know there are other people out there who love blue cheese (just not in my house!). Put that passion to good use with this ‘double blue’ salad.
You can choose to top it with some toasted nuts like walnut or pecans, or take an extra step and whip up some of our ‘Balsamic Candied Nuts‘ for a real treat!
Ingredients
Dressing:
1/4 cup Blueberry Dark Balsamic
1/4 cup UP Extra Virgin Olive Oil (or your favourite flavoured oil)
1 clove garlic, finely chopped
1 Tbsp Dijon mustard
2 Tbsp local honey
salt and pepper to taste
Salad:
1 pkg fresh baby spinach
1 Cup fresh blueberries
1/2 cup crumbled blue cheese
1/2 cup thinly sliced red onions
Optional topping: toasted nuts or our Balsamic Candied Nuts.
Directions
Blend all the ingredients up to the salt & pepper until it thickens. (You can whisk it or shake it up in a lidded container.)
Assemble the salad ingredients in a large bowl (it shouldn’t be more than 1/2 full), pour the vinaigrette over top then give it a BIG toss!
Top with nuts if desired and serve.
